This soup is my personal favourite. Many Portuguese people make it different ways. Some look more white than others. This is the way I grew up with it and have fallen in love with this soup since I was a child.


Ingredients:

  • 1 or 2 chicken breast pieces
  • 3 cups of water
  • 1 cup of rice
  • 1 whole onion
  • 1 tablespoon of salt
  • 3 egg yolks
  • vinegar

Instructions:

  1. Boil one or two chicken breast pieces. Then remove from water.
  2. Use 3 cups of water, add 1 cup of rice, 1 whole onion, and a little bit of salt.
  3. In a separate bowl, mix a little cold water, 3 egg yolks, and vinegar.
  4. Add the chicken back with rice pot.
  5. Cook the rice and taste to see when it is warm enough to eat.
  6. Serve while warm.
