June 3rd, 2007Portuguese Canja (white soup)

This soup is my personal favourite. Many Portuguese people make it different ways. Some look more white than others. This is the way I grew up with it and have fallen in love with this soup since I was a child.
Ingredients:
- 1 or 2 chicken breast pieces
- 3 cups of water
- 1 cup of rice
- 1 whole onion
- 1 tablespoon of salt
- 3 egg yolks
- vinegar
Instructions:
- Boil one or two chicken breast pieces. Then remove from water.
- Use 3 cups of water, add 1 cup of rice, 1 whole onion, and a little bit of salt.
- In a separate bowl, mix a little cold water, 3 egg yolks, and vinegar.
- Add the chicken back with rice pot.
- Cook the rice and taste to see when it is warm enough to eat.
- Serve while warm.

I ate Canja for lunch today. Instead of Rice we used one type of pasta that relates to letters. It’s called “Massa de Letras” (letters of pasta)

I have been looking for a soup recipe for sometime now and I can’t seem to find it anywhere on the internet. I am looking for “Caldo Azedo” do you have a receipe for this soup?
