June 1st, 2007Portuguese Rice Pudding

Portuguese Rice Pudding is known as Arroz Doce or Arroz de Leite (in Portuguese). It is unlike normal puddings you find at the store. It is cooked over the stove so you don’t need to put it in the fridge before serving. You can learn more about it on wikipedia.
Ingredients:
- 4 cups of water
- 8 cups of milk
- 2 cups of sugar
- 2 cups of white rice
- 6 egg yolks
- grated lemon peel
Instructions:
- Boil milk and water.
- Add sugar, rice, and grated lemon peel.
- Mix, then add eggs.
- Cook until rice thickens.
- Pour into plate.
- Sprinkle cinnamon into rows .
- You can now serve.
Note: Portuguese who cook this pudding use different amounts of the ingredients. This is the way my mother makes hers which is really delicious especially when warm.

Tina, I love Rice Pudding when it is still warm. Sometimes I do it has a dinner dish for me.
